Fluffy Banana Pancakes

Light and fluffy pancakes with ripe banana baked right in.

Instructions

Make the batter

Mash ripe bananas in a large bowl until smooth.

Add egg, milk, and vanilla extract to the banana and mix well.

Sift in flour, baking powder, and a pinch of salt then fold gently until just combined. Do not overmix.

Cook

Heat a non-stick pan over medium heat and lightly grease with butter.

Pour 80ml of batter per pancake. Cook for 2 minutes until bubbles form on the surface, then flip and cook for another 1 minute until golden.

Serve

Serve with maple syrup and fresh berries.
